Beecher's Handmade Cheese

 

Would you like some macaroni with your cheese? (No, it's perfectly balanced)

Many places claim they have 'handmade' this and 'homemade' that, but Beecher's is one where you can actually see them making their cheese by hand right in front of the store (at least in the Seattle Pike Place location).  They actually have a who-knows-how-many gallon tank that is constantly cranking out cheese with the help of some people in lab coats and hairnets.  Almost feels like you get a little cheese factory tour that ends with some product.

As far as the food goes, we've tried the cheese curds and grilled cheese, but we keep going back for the mac & cheese.  My theory on mac and cheese is it's not that hard to make.. since you basically have some sort of pasta and a mornay sauce. So in the end, it's the quality of the cheese will make or break it.  I'm not saying Beecher's has a monopoly on the worlds best cheese. But, on a cold Seattle day, a hot cup of creamy mac & cheese is the perfect comfort food (along with a bowl of pike place chowder).  This is also a good spot if you're running around the market trying multiple places since you can get a small cup to share and have room for the next stop.
